Super Duper Simple Potato Salad for Summer Picnics, Eggs Optional

This is what I came up with when I was looking for the “best” potato salad on the internet.

I couldn’t find my mum’s recipe, and I wanted something simple that didn’t necessarily need an egg, since my main picnic partner for tomorrow is not a fan of eggs unless they are delicately placed on top of toast. Otherwise, eggs be off the table.

So, we have a simple recipe where you just throw the wet in a blender. Cook your potatoes. Peel them. Dump in the dressing. Chop some celery. And call it a day.

The recipe is inspired by a potato salad recipe from A Spicy Perspective. I’ve made it smaller, changed up some of the ingredients, and (like I said) shoved it all in a blender.

What makes it tasty?

It’s tangy, has nice crunch, and isn’t too gloopy but is gloopy enough to be delicious. The blended onion gives it some punch and the sweet pickle rounds out the flavours. Celery powder or seeds give it that nostalgic taste of summer.

Ingredients:

  • 2.5 lbs Russet Potatoes or whatever old starchy potatoes you have on hand

  • 1 cup mayo

  • 1/2 cup sweet pickles or butter pickles, diced

  • 1 T yellow mustard

  • 1 t dijon

  • 1.5 t apple cider vinegar

  • 1/2 t celery powder or seeds (whatever you got)

  • 1/4 t or 1/2 t paprika

  • 1/2 t cayenne if you want to give it a kick

  • handful of fresh dill, chopped to taste

  • 1-3 celery stalks depending on taste

  • 1/4 sweet onion diced

  • optional hard boiled eggs - 2 to 3 - peeled x chopped

  • salt and pepper to taste

How To:

  1. Quarter potatoes.

  2. Stick them in a pot.

  3. Cover with cold water and add some salt.

  4. Bring to a boil.

  5. Lower temp so they’re boiling in a chilled out manner. Boil for 15 to 25 minutes until skins starting to peel off and cooked through.

  6. Drain and let sit until not super burning hot.

  7. Peel the potatoes and then dice them up.

  8. Pop them in a bowl.

  9. Now pull out your hand mixer or mini blender or whatever blender you like to use.

  10. Put all the blue ingredients into the blender i.e. the wet stuff.

  11. Blend until mixed but still full of texture.

  12. Then dump it in the bowl and mix it gently.

  13. Add extra salt and pepper to taste.

  14. Chop up celery finely and add to salad.

  15. If everyone in the fam is an “egg person,” then add the chopped up hard boiled eggs and mix gently.

  16. If everyone is NOT an egg person, then just hard boil the eggs and add them to each persons dish separately. Tastes great with or without eggs.

  17. If you want to add some extra stuff, you can chop up more pickles, add cooked or fresh peas, or bacon bits. It would even be tasty with finely diced green or ambrosia apples.
